At Rocky’s, we’re known for our fried chicken… from the hottest of hot all the way down to our plain fried chicken, you won’t find a more satisfying flavor. But it’s also the texture and juiciness of our chicken that sets us apart from the competition.
We brine our chicken in buttermilk and cook it in small batches so it’s fresh, moist and tasty! Your chicken is made to order… that means it is always hot and ready to please your tastebuds.
We serve “Nashville Style” Hot Fried Chicken and it all starts out Plain. We spice it as you like it and serve it on two slices of white bread, topped with a pickle slice.
Fried Chicken
About the chicken we serve
Our birds are naturally raised for superior quality and flavor. Healthy birds make for healthy proportions. There’s a whole lot of meat on our chickens… and we know how to cook them so they stay tender and juicy. But like the folks who love our chicken… every piece is different.
Here are the pieces we fry:
Light or dark meat?
So what’s the difference between light and dark meat anyway? It’s the kind of fibers found in the meat that makes it light or dark. Particularly the more “red fibers” that are present, the darker the meat.
Light meat is found in the breast, tenderloin and wings, they contain around 10% red fibers. The flavor is usually more mild and can dry out if it gets overcooked. Light meat also has higher levels of protein and twice the amount of saturated fats. Light also has higher levels of vitamin B… particularly, niacin (B-3) and pyridoxine (B-6).
Dark meat has over 50% red fiber and is found in the thighs and legs. The flavor tends to be more pronounced as well as being a bit juicer than other parts of the bird. It is also less likely to dry out if cooked for longer periods of time. Dark meat contains higher levels of iron, zinc and vitamin C.
On the plate
Besides the pieces of fried chicken on the plate, you’ll find two pieces of white bread and a pickle. So what’s up with that? Well, this harkens back to that Nashville Style cooking. The bread helps to soak up the drippings from the chicken and give you a bit of that wonderful flavor after you’ve finished off the chicken. The pickle on the other hand… well, there are two camps here. Is it meant as a palate cleanser before you eat the chicken… or after. We’ve decided to stay out of this battle. You can even eat it on the chicken and we won’t say a word.
The better batter
The scratch-made batter is where the real taste is found. We start off with our own take on the traditional “Nashville Style” fried chicken, adding a few all-natural ingredients that really make for an incredibly delicious experience. No matter how you like it, pain to extra hot, we’re sure you’ll agree… our batter makes for some delectable tasting fried chicken.
